Hot sauce goes back as far as the 8th century and the Mayans... Guess when you're sacrificing virgins, a little dab of hot sauce goes a long way. We could sacrifice a virgin if Tucker would volunteer.  The first sauces were probably just water and peppers, but due to colonization (thanks Chris) and imported foods and ingredients, it soon evolved and hot sauce went all over the world. Hot sauce became commercialized in 1868 when Edmund McIlhenny, a banker from Maryland moved to Louisiana and created the first batch of Tabasco hot sauce. Although there are hot sauce varieties all around the world, with regional differences, tabasco is one of the largest.

 

The Scoville scale is a system that measures the level of capsaicinoids (which includes all the spicy chemicals, not just capsaicin) in a particular substance. It was developed in 1912 by pharmacist Wilbur Scoville. Its unit of measure, Scoville heat units (SHU), is used when discussing the spiciness of a particular food. SHUs can also be used for non-food items, such as law-enforcement-grade pepper spray, which can be anywhere between 2 to 5 million SHU. For example, a pepperoncini registers 100-500 SHU, A habanero is 350,000-500,000, the highest being Carolina Reaper at 1.4M to 2.2Million... the only thing higher is police pepper spray at 2-5M.

The global hot sauce market is $2.54B in 2020, but hindered by covid. The global market showed lower growth of 4.91% in 2020. The global hot sauce market is anticipated to grow from $2.71 billion in 2021 to $4.38 billion in 2028 at a CAGR (Compound annual growth rate) of 7.1% during forecast period, 2021-2028. Globally, the primary factor driving the demand for hot sauces is the influence of Asian cuisines, followed by Indian and Latin cuisines across all geographies. The market was broken down by the following types of sauces: Tabasco (holds the largest share at about 23%), habanero, jalapeno, sweet and spicy, and other. The N American market share is $1.13B.
